Ingredients
Main Components:
- 1 ½ cups basmati rice, rinsed
- 2 ½ cups vegetable or chicken broth
- ½ tsp saffron threads (steeped in 2 tbsp warm water)
- 1 tsp turmeric
Aromatics & Seasonings:
- 3 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tsp cumin
- ½ tsp cinnamon
- Salt to taste
Garnishes:
- ¼ cup toasted pine nuts
- 2 tbsp chopped parsley
- Lemon wedges
Instructions
1️⃣ Prep: Rinse rice until water runs clear. Bloom saffron in warm water.
2️⃣ Sauté: Heat oil, cook onion until soft. Add garlic, cumin, cinnamon, and rice. Toast 1 minute.
3️⃣ Simmer: Pour in broth, saffron water, and turmeric. Boil, then cover and simmer 15 mins on low.
4️⃣ Rest: Remove from heat. Let sit covered 5 mins, then fluff with a fork.
5️⃣ Serve: Garnish with pine nuts, parsley, and lemon wedges.
Notes
- For Extra Fluffy Rice: Place a clean towel under the lid while resting.
- No Saffron? Substitute with ½ tsp extra turmeric + ¼ tsp paprika.
